I don't have a lot of free time and I sure don't want to spend what time I do have laboring in the kitchen. That is why quick and easy -- with emphasis on easy -- recipes are always my favorites.

This recipe takes only a few minutes to put together and takes 40-45 minutes to bake, which is plenty of time to read, catch up on favorite tv series on Netflix or, in my case, do laundry, vacuum, etc.

Ingredients:

1 7-ounce package of Jiffy Apple Cinnamon muffin mix

1/3 cup of margarine

1 14-ounce can of whole berry cranberry sauce

1 21-ounce can of peach pie filling

1/2 cup of chopped pecans

Directions:

Preheat oven to 350 degrees.

Mix the peach pie filling and cranberry sauce together in a bowl, then pour into an 8"x8" casserole dish coated with cooking spray.

In another bowl, cut the muffin mix and margarine together with a pastry cutter until the mixture is crumbly. Add chopped pecans.

Spread muffin mixture on top of fruit mixture.

Bake 40-45 minutes or until topping is golden brown and fruit mixture is bubbly.

Serve warm with vanilla ice cream.
