Cracking the Parm at Whole Foods

Whole Foods will open the wheels of the magnificent Parmigiano Reggiano. There is a centuries-old art to opening the cheese wheel so that the internal crystalline structure with its characteristic crumbly texture is left intact. Their hand-selected wheels are aged at least 24 months for premium flavor and will be sampled after the crack at 3:00pm!
