Gillespie told Atlanta Magazine he wants the Gunshow atmosphere to be closer to who he is as a chef.

"There’s no concept behind it," he told the magazine. "I’m just opening a new restaurant, and I want to be a lot closer to who I am now at this point in my life and career than my current restaurant is."

His bio at the Woodfire website notes that since 2010, Gillespie has been a semi-finalist for the James Beard Foundation’s “Rising Star Chef of the Year” three years in a row and has been nominated for Food & Wines “The People’s Best New Chef."
